Adventures in Gluten-Free Cooking: Chocolate Crepes

Tonight’s adventure in gluten free cooking:
Chocolate Crepes.
Chris was craving something sweet and fruity… there wasn’t any fresh fruit in the house, so I decided to see what I could do with what was in the pantry – the eventual result was chocolate crepes, filled with a little bit of cream cheese and cherry pie filling. They were really pretty easy, once I figured out how they wanted to be handled – the real trick was learning to pry the edge up with a spatula and then grab it with my fingers to flip it over. I’m sure there’s a better way, but that turned out to be the way that worked for this time. I think I could have flipped ’em with the spatula if they were smaller; I was using the large skillet, and it made dinner-plate sized crepes. The same cookbook uses this recipe for “chocolate fettucine”… roll the crepes up, slice them into thick ribbons, pile them randomly on a plate in a pool of raspberry and chocolate sauces, then drizzle over the top with more sauce and garnish with fresh raspberries. It seems like one of those desserts that are a little extra work, but the presentation is worth it.

    Seriously, though, they were really yummy… I wish I had been better equipped with some fresh fruit and some chocolate sauce, but they were certainly tasty crepes. It’s not a dish that I have ever made more than a couple of times, BC (Before Celiac) but it’s certainly an appealing option now, because they have a good texture and a good flavor. Chris commented that they would make a nice dessert for a dinner party. I was intrigued with the savory crepe possibilities, making a non-chocolated version and filling with something tasty like marinated shredded chicken and cheese.
