Adventure in Gluten-Free Baking: Chocolate Eclairs
Tonight’s adventure in gluten-free baking:
Chocolate eclairs. This new dessert book is amazing… I’m learning how to make foods that I’ve only gotten at nice restaurants before. Tonight, the chocolate eclair – a pile of air held together by a delicate sweet and creamy matrix of pure calories. They were sticky and challenging to blend up – I don’t know if this is typical of puff pastry in general, or if it’s particular to the gluten-free flour; I’ve never made puff pastry all the way from scratch before. When it was all said and done, after the rich vanilla cream pudding, the chocolate ganache, and the puff pastry, there were 2 whole eggs, 2 egg yolks, an ounce of baker’s chocolate (I only made a small recipe of the ganache, since I wasn’t icing a whole cake) and a whole pint of heavy cream. A bit of quick math tells me that it’s more than enough calories for an entire day, and probably more than enough fat for an entire week. But Lords and Ladies, they were yummy.

Again, this adventure is gluton free cooking sounds just divine! Boy do I wish dogs were allowed to eat chocolate!

Chocolate just makes things yummier. I’m learning how to really work with the stuff… previously, I had mostly just added cocoa according to a recipe, or put chocolate chips into things – now I’m learning some cool techniques to make really tasty stuff.

Well, the vet told me not to give my house canines any. But maybe the digestion of Lobo texicanus is sufficiently different that you could tolerate it? Maybe you and Princess V. need to come over for dinner some time, and we can have a chocolate challenge. There’s a recipe for a raspberry/chocolate Genoise that has piqued my interest.
